In collaboration with the Philippine Foremost Milling Corporation, the Department of Trade and Industry (DTI) conducted a two-day capability building workshop in baking joined by Sugar Industry Foundation, Inc.’s ARBO partners, the Association of Negros Occidental Food Processors, and the Department of Agrarian Reform.
The workshop was conducted to increase knowledge and practical skills of individuals who work in the production of bread and pastries. SIFI’s agrarian reform beneficiaries’ organizations (ARBOs) with bakeries as their livelihood attended the event. These ARBOs are MARBE Agrarian Reform Cooperative from Victorias City, and Cusi Farmworkers and Farmers Agrarian Reform Cooperative from Pontevedra.
A lecture was done by the Philippine Foremost Milling Corporation highlighting bakery mathematics that focused on appropriate costing and calculation in the business. This comprises the basic management of expenses, pricing and profitability of goods. Updated techniques and recipes were also shared to the participants to further help the quality of products in their respective enterprises.
After the lectures, the practical sessions of baking followed. With the supervision of facilitators, the participants went through the various processes including mixing, kneading, shaping, proofing, baking, and decorating baked goods. The following products were prepared:

- Chocolate crinkles
- Loaf bread
- Ensaymada
- Banana cake
- Mamon
- Spanish roll
- Pizza
- Aloha carrot cake

The representatives from MARBE and CUFFARC expressed their enthusiasm in their practical exercises. They showed their interest and cooperation in implementing the same methods to their bakery.
